Dino Dudes BBQ

1/4 C. veg oil
1 C. minced onion
1 C. minced green pepper
1 jalapeno pepper, seeded & minced
pinch each of kosher salt & black pepper
2 TB minced garlic
1 can (28 oz) tomato sauce
2 C. ketchup (pref. heinz)
1 C. water
3/4 C. worchestershire sauce
1/2 C. cider vinegar
1/4 C. lemon juice
1/4 C. molasses
1/4 C. cayenne pepper sauce
1/4 C. spicy brown mustard
3/4 C. dark brown sugar, packed
1 TB chili powder
2 tsp coarsely ground black pepper
1/2 tsp ground allspice
1 TB liquid smoke (optional)

Pour oil into large saucepan and set over medium-high heat. toss in the oinions, green pepers and jalapenos and stir. season with pinch salt and pepper and cook till soft. add the garlic and cook 1 minute more. dump in everything else except then liquid smoke. bring to boil, lower heat to simmer. simmer 10 minutes. swirl in the liquid smoke and let sauce cool. pour into container, cover, and store in refrigerator untilr eady to use. makes 6-7 cups

variation for HOT BBQ sauce:
add 2-3 seeded and minced habanero peppers ( about 1 1/2 tsp to 1 TB) along with onions, peppers and jalapenos. also add 1/2 tsp cayenne pepper along with the other ingredients for extra punch.

*along with the usual caution in working with habaneros...use gloves, don't touch yer eyes....etc....
